Another box of purple

It took many attempts before I succeeded and I couldn’t have done it without friends’ help. I baked my first pound cake about a year ago and I have baked many after that. Each time the cake turned out either too dry or under-baked and the cake eventually ended up in the garbage bin. I knew I was missing the key factor but I didn’t know what it is. Only lately I was able to figure out from a baking book that a friend lent me. In the past, I made the mistake of adding too much liquid as my way to create a moist cake. What I needed to do instead, was to beat the butter and sugar thoroughly until it becomes fluffy and turns into a beautiful ivory colour.

This is for you, I, who gave me this amazing recipe and who makes the best blueberry butter cake in the world.

This blueberry cake tastes very much like a pound cake since quite a lot of butter (1 cup) was used. The blueberries tasted sour against the buttery taste of the cake, which gave the cake a good balance.
